Whipped Feta with Overall Health and Wellbeing Olive Oil

Ingredients:

  • 200 g Feta cheese
  • 3 tablespoons plain Greek yogurt
  • 1 small garlic clove, finely grated
  • 2 tablespoons Overall Health & Wellness Functional Olive Oil, plus more for drizzling
  • Zest of ½ lemon
  • Cracked black pepper, to taste
  • Fresh herbs (thyme, parsley, or mint), for garnish
  • Warm flatbreads or crudités, for serving

Method:

  1. Crumble the feta into a food processor or blender. Add the Greek yogurt, lemon zest, garlic, and 2 tablespoons of the Overall Health & Wellness Functional Olive Oil.
  2. Blend until very smooth and creamy, scraping down the sides as needed. Add a little more oil if the mixture is too thick.
  3. Spoon into a shallow bowl and use the back of a spoon to create swirls.
  4. Drizzle generously with extra Overall Health & Wellness Functional Olive Oil, and finish with cracked black pepper and fresh herbs of your choice.
  5. Serve immediately as a dip with warm flatbreads, or spread onto toast, grain bowls, or roast veggies.
