- 3 cups cake flour
- 1 cup icing sugar
- 1 pinch salt
- Zest of 2 organic lemons

Method
- Preheat the oven to 160 °C.
- In a mixing bowl, whisk the flour, icing sugar, salt, and lemon zest together.
- Add the Calming Blend Functional Olive Oil and stir until the mixture forms a soft dough.
- Transfer the dough into a greased 20 x 20 cm baking dish, pressing it evenly into all corners using your fingertips.
- Prick the surface all over with a fork.
- Bake for 45 – 55 minutes, or until the shortbread is set and just beginning to turn golden around the edges.
- Let cool in the pan for exactly 20 minutes, then use a sharp knife to cut into squares.
- Allow to cool completely before gently lifting out with a small spatula and serving.
