Functional Olive Oil Calming Blend Shortbread

Ingredients

  • 3 cups cake flour
  • 1 cup icing sugar
  • 1 pinch salt
  • Zest of 2 organic lemons
  • 1 cup Calming Blend Functional Olive Oil

Method

  1. Preheat the oven to 160 °C.
  2. In a mixing bowl, whisk the flour, icing sugar, salt, and lemon zest together.
  3. Add the Calming Blend Functional Olive Oil and stir until the mixture forms a soft dough.
  4. Transfer the dough into a greased 20 x 20 cm baking dish, pressing it evenly into all corners using your fingertips.
  5. Prick the surface all over with a fork.
  6. Bake for 45 – 55 minutes, or until the shortbread is set and just beginning to turn golden around the edges.
  7. Let cool in the pan for exactly 20 minutes, then use a sharp knife to cut into squares.
  8. Allow to cool completely before gently lifting out with a small spatula and serving.
