Ingredients:
- 500 g baby potatoes
- Salt, to taste
- 3 tablespoons Immune Support Functional Olive Oil
- 1 tablespoon chopped chives or parsley
- Zest of 1 lemon
- Cracked black pepper, to taste
Method:
- Place the baby potatoes in a pot, cover with cold water, and add a generous pinch of salt.
- Bring to a boil, then simmer for 15 – 20 minutes, or until fork-tender. Drain well.
- While still warm, place the potatoes in a bowl. Gently crush each one just slightly with the back of a spoon.
- Drizzle generously with Immune Support Functional Olive Oil and toss gently to coat.
- Add chopped herbs, lemon zest, and cracked black pepper to finish.
- Serve warm as a side or enjoy as a nourishing snack on its own.
