Baby Potatoes with Immune Support Functional Olive Oil

Ingredients:

  • 500 g baby potatoes
  • Salt, to taste
  • 3 tablespoons Immune Support Functional Olive Oil
  • 1 tablespoon chopped chives or parsley
  • Zest of 1 lemon
  • Cracked black pepper, to taste

Method:

  1. Place the baby potatoes in a pot, cover with cold water, and add a generous pinch of salt.
  2. Bring to a boil, then simmer for 15 – 20 minutes, or until fork-tender. Drain well.
  3. While still warm, place the potatoes in a bowl. Gently crush each one just slightly with the back of a spoon.
  4. Drizzle generously with Immune Support Functional Olive Oil and toss gently to coat.
  5. Add chopped herbs, lemon zest, and cracked black pepper to finish.
  6. Serve warm as a side or enjoy as a nourishing snack on its own.
